Ice Cream Divine

Did you know that avocados are higher in potassium than bananas! In addition, they offer a great source of vitamin E, K, B6, and folate.

Ingredients

  • • 250ml (1 cup) coconut milk
  • • 2 ripe avocados
  • • 30ml or at least 2 tablespoons lemon zest
  • • Juice of two lemons or limes
  • • 1 tsp vanilla extract
  • • Sweetener of your choice (I like to use rice malt syrup) and quantity to taste

Instructions

    Sometimes you will be surprised that you already have the ingredients listed in a yummy, healthy product that you buy from the supermarket. My girl Emma loves anything with lemon and recently chose a lemon ice cream when she was out shopping with me. It was divine and when I looked at the ingredients, we had it all. No time was wasted and we whisked it up in a jiffy. To our delight, it was as divine as the original…even a little better cause it was homemade.


    Blend all the ingredients on high for at least two minutes - till well mixed and thick. Put in freezer-safe, ice lolly or ice cube containers and freeze. Enjoy a very healthy, satiating ice cream
