FOOD AS MEDICINE: Mushrooms are high in Vit D (and don't forget to sunbathe your mushrooms so the Vit D can increase) and the very important immune minerals selenium, zinc, and manganese that are required for the proper functioning of the enzyme superoxide dismutase. The glucans and heterogalactans in mushrooms are known to function in an anti-inflammatory capacity by inhibiting the activity of enzymes like cyclooxygenase-2 (COX-2). They are also known to help reduce inflammatory cell signaling and can help to stimulate immune function, especially within our digestive tract.

Ingredients

  • 2 Portabella Mushrooms
  • 10 Cherry tomatoes
  • 10 Kalamata olives
  • 2-3 tbsp Olive oil
  • Fresh thyme and rosemary
  • 2 tbsp Goats cheese (or feta cheese depending on intolerances)

Instructions

  1. Slice cherry tomatoes in half
  2. Slice olives and half
  3. Stuff the portabella mushrooms with olives and tomatoes halves
  4. Drizzle with a good amount of olive oil
  5. Top with fresh thyme, rosemary and goats cheese
  6. Sprinkle with salt and pepper
  7. Place in the oven or BBQ for 20min
  8. Enjoy warm alone or a side dish
